Yeah, here is my last word, and and not your’s !
Very floral and vintage taste, as you can imagine, i got inspired by the “Last Word” cocktail with some changes.
It tooks me ages to search Violette flowers but it looks like it is pretty difficult to find as it is very expensive, so I gave up.
I named it “Biolélé" (and I know it’s "Viorele”, not “Biolélé”) as a tribute to Freddy Mercury’s tune : Living on my own

2oz. Homemade Jasmin Vokka (手作りジャスミンウオッカ)
0,75oz. Cointreau Triple Sec
0,5oz. Lemon
1tsp. Violet Liqueur (スミレリクール)
Dash : Marascino Liqueur
Dash : Bitter Truth Berlin Bitter

- Shake everything and Strain !
- Garnish.

Kinich Ahau, The Golden Fashioned

Lovely Old Fashioned ! Here is my mayan version… Delicious…
Kinch Ahau is the mayan Sun God.
The drink is delicious, sweet as the nectar of occidental honey.
Taste wise, a smoked veil coats the drink on top of the Tequila.
Bitters adds complexity, no sour, nor bitterness
And I have no doubt you will enjoy it !

1,5oz. Arette Reposado Tequila
0,5oz. Del Maguey Mescal
0,5tsp. Blue Agave Nectar
Dashes : Scrappy Lime Bitter (ライムビター)
Dashes : Angostura

- Sculpt a small-medium ice ball with an icepick or a knife
- Add all the ingredients in a chilled mixing glass
- Stir
- Put the iceball into a single old fashioned glass and strain the mix in it

Mocktails : ILMDC I (モクテル)
1st serie of mocktails of I Love My Diet Coach 

End of January, I was called to prepare a press conference for a diet coaching company. As I had been mixing spirits all along, I was pretty surprised to be ask for making mocktails (yes, forget about doing a diet with cocktails… that might works for some young drinkers tho). However, to me, cocktails and mocktails is somehow similar. All we need is a good taste and beautiful drink !
So, the goal was to make 4 different colors and healthy mocktails : orange, red, green and yellow/white. Not too hard huh? But ingredients had to be seasonal and accesible to all. Also the way to make it had to stay easy, so everybody can enjoy it at home… which makes things more complicate if i wanted to mix something interesting.
Anyways, here is the first serie came up with, enjoy.
OH ! And never forget using fresh juices, made from quality squizzed fruits !
(often, organic is way better taste)Most of the time, forget about industrial juices. You can use a juice extractor, it worths it.

Santé !

Vitality I (Orange)

2,5oz. Carott Juice
2,5oz. Apple Juice
2,5oz. Cranberry Juice (Ocean Spray'll do)
0,25oz. Ginger Juice

- Shake all the ingredients
Double strain (if the juices are not strained yet) into a chilled tall glass

Detox I (Green)

3oz. Cucumber Juice
0,75oz. Lime Juice
0,5oz. Agave Nectar
0,25oz. Ginger Juice
Few Corriander Leaves

- Put the lime juice and the corriander leaver in a shaker, Muddle gently
- Add the remaining ingredients and shake
Double strain (if the juices are not strained yet) into a chilled coupe glass


Winter Punch I (Red)

2oz. Blood Orange Juice
1,5oz. Grapefruit Juice
0,75oz. Lemon Juice
0,5oz. Aloe Vera Juice
0,25oz. Agave Nectar

- Shake all the ingredients
- Double strain (if the juices are not strained yet) into a chilled tall glass


Energy I (Yellow/White)

1/4 Banana
4oz. Young Coconut Juice
2oz. Pineapple Juice
Pinch Vanilla Powder
Dash : Coffee Bitter

- Put all ingredients in a blender
- Pour into a chilled tumbler
- Garnish with a pinch of Nutmeg Powder

incense smoked  <15%alc.

I came up with a really nice and simple amaretto sour (I picked up the scotch idea from Jeffrey Morgenthaler’s recipe. Very simple and obvious harmony with amaretto).
Amaretto sour sounds like a very light, mature, feminine and elegant cocktail to me. But with a lack of mystery, darkness and orientalism. You know what I mean? Smoke !
It took me time to decide what kind of smoke I would incorporate in, and after few trials I came up with incense (not usual incense but raw moist and dark barks)
And to add more sweetness, I have added a veil of Orange thru bitters and zest (which is very important to dispel this “wet dog” smell from eggwhite).
The only thing to take care of is the shaking of the mix in the incense. Be really careful not to shake to hard and too much, otherwise the drink will really be too much perfumed.
This drink is really amazing and I guess you will enjoy it.
As last words, I dedicate this drink to Michele Lamy who, to me, really stick to the image of this cocktail

0,75oz. Monkey Shoulder Scotch Whisky

1tsp. Maple Syrup
Dash : Ardbeg Islay Whisky
Dash : Dr. Adam’s Aphrodite Bitter
Dash : Bitter Truth Orange Bitter
Eggwhite (卵白)
Pinch : Emirates Bakhoor Incense 

- Shake eggwhite in a boston shaker
- Add all ingredients but incense
- Light up the incense and input (with a smoke machine) the smoke in a bottle.
- Pour the mix in the bottle and gently shake 4-5 times
- Pour the mix in a shaker, add ice and shake hard and longer
- Strain into a single old fashioned glass (or a double old fashioned with an iceball)
- Garnish, invoke Dionysos and enjoy

Garnish : Orange Zest, Griottines, Vegetal Charcoal
付け合わせ : オレンジゼスト、Griottines, 木炭

Carefull with dosage, pure essential oil is just ove powerfull. If you wanna laugh&#160;: First time I used it, I poured a drop of patchouli oil in a smoky margarita&#8230; And know what, I couldn&#8217;t drink anything else and I woke up the following day with a GIANT PATCHOULI TREE out of my throat. I felt green and oriental&#8230;

Homemade Elderflower & Hibiscus Syrup (ニワトコ花とハイビスカスシロップ) :

Tomorow, I have a guest that does not drink any alcohol, not even an ounce !
Terrible challenge : no spirits, no essential taste.
Making a good and interesting drink with the usual ingredients you can get in a city is pretty difficult.
As I have a nice and wide collection of dried plants (thanks to my homemade bitters experimentations) and no syrup at all, my decision was obvious.
So, here is the simple recipe to make a nice deep hibiscus and elderflower syrup.
Later, I will post the recipe in which I used this syrup.
Enjoy !

2 cups Clean H2O (水)
2 cups Demerara or Turbinado Sugar (デメララ中白糖)
2 Tbsp. dried Elderflower (ドライニワトコ花)
1 Fistful dried Hibiscus (ドライハイビスカス)
2 oz. Vokka (to conserve longer)

- Mix all the ingredients together (except Vokka) in a saucepan. Low heat
- Stir constantly until the sugar dissolve. Take the saucepan out of heat, Cool it down
- Strain into a sanitized bottle and add the Vokka

Homemade Spicy Grenadine (スパイシーグレナディン)

Finally, I decided to get rid of my actual crap Grenadine by making my own one.
Pomegranate also originally means the seeded apple and it’s origins come from Persian, and spread all over Orient, from Turkey to Afghanistan.
Real pomegranate juice is kind of close to cranberry juice, deeper in taste with a vegetable (tomato) veil, but to me, not rich enough. So, I decided to add spices and flowers in my recipe.
If you can not make your own pomegranate fresh juice, you can substitute by POM juice.

2cups Fresh Pomegranate Juice (ザクロジュース)
2cups Demerara or Turbinado Sugar (デメララ中白糖)
Dried Hibiscus
to taste (ドライヒビスカス)
Cassia Bark to taste (桂皮)
Cloves to taste (クローブ)
Black Pepper to taste (黒胡椒)
Allspice (optional) (オールスパイス)
2oz. Vokka (for longer conservation)

- Add all ingredients but vokka in a saucepan and turn on low heat
- Stir constantly until the sugar dissolve
- Double strain, cool it down and add the Vokka

This drink was made in close collaboration with Tepco Japan, Areva France and all the Nuclear Lobbies (still alive one year later, and nothing has changed…)
A molecular version of the drink I made from an old cocktail : Mayuko
Thus, you will need to make an radioactive melon core and the cooling fluid.

What’s really happening in Japan (therefore in the world) is just tragic and insane.
Please, make your own search and opinion about it and DO NOT FORGET to spread a word while making your cocktail for your guests. 

For the Radioactive Melon Core (放射性メロン炉心真珠) :

1,5oz. Radioactive Midori Melon Liqueur
1oz. Lime
0,5oz. unfiltered nuke plant rejected H2O
0,25oz. Sodium Alginate

- Mix all the ingredients together and place it in a round shape ice tray
- Put the tray in your freezer
- Once frozen, turn out the frozen mixture into a Calcium Chloride bath (10g for 1L of H2O)

The Cooling Fluid (冷却液) :

2oz. Herradura Bianco Tequila
0,5oz. Saint Germain Elderflower Liqueur (ニワトコ花リキュール)
0,5oz. Lemon
Dashes of Crafted Peach Schapps (ピーチシュナップス)
Radioactive Melon Core (放射性メロン炉心真珠)
Dust of Cesium 137

- Shake all ingredients but the Melon Pearl
- Place the Cesium 137 powder in the bottom of the straight glass, then Melon Pearl and strain the mix in it

one of the most classic cocktail !
I never had a perfect one in any bar (and any recipes) I probably don’t get the concept behind and I guess my palate is different from the ancient creators of the original recipe.
So I start to focus on it and found out i needed some spices. pepper, as a very common spice was probably the best one to match to me.
I dedicated it to my dear friend, Jérôme Champignon, recently moved to Manhattan for the best !
Santé et Minecraft State Building ! 

3oz. Rittenhouse 100proof Rye Whisky
0,75oz. Antica Formula Sweet Vermouth
Dashes : Luxardo Marascino Liqueur
Dashes : Dr Adam Aphrodite Bitter
Dashes : Angostura
10 Black Pepper (黒胡椒)


- Crush Black Pepper in a mixing glass
- Add all ingredients and stir
- Strain and Garnish
- Serve with a handrolled sweet tobacco cigarette 

Garnish : Lemon Peel, Griottine
